Recipe - Fish Steaks
Marlin Dish: Pan fried
Marlin with Pineapple Salsa
1lb of Marlin
1 tsp of salt
1 tsp of
cayenne pepper
1 tsp of
garlic powder
1 tsp of onion powder
1 tsp thyme
1/2 tsp of lemon pepper
2 limes
1 cup of diced
pineapples
2 tbsp of lemon juice
2 tbsp of sweet chili
sauce
1 tsp of minced garlic
1 tbsp of chopped
cilantro
1 tsp of minced onion
Preparation of fish
Rinse fish in lime juice
rinse then pat dry. Coat fish heavily with seasoning mixture creating a
crust. Place fish in a hot skillet with enough oil to barely cover the
pan. Cook fish for 3 mins on each side depending on the thickness of
the steak. Cook until desired colour is reached.
Preparation of Pineapple
Salsa
Finely chop pineapple
then add lemon juice, garlic, cilantro onion and sweet chilli sauce. Spoon over
hot fish and serve.
