Bangamary Dish: Spicy
Beer Batter Banga Mary with sweet chilli scotch bonnet sauce
1lb of Banga Mary 1 cup of flour 1 cup of corn starch 3 tsp of baking powder 1 tsp of salt 1 tsp of
cayenne pepper 1 tsp of
garlic powder 1 tsp of onion powder 1 tsp of Maggi
bouillon powder 1/2 tsp of lemon pepper 1 cold of beer 1 lemon 1/4 cup of sweet
chilli sauce 1/4 of a scotch bonnet
finely minced
Preparation of
Batter Sift baking powder,
cornstarch and flour together then combine seasonings. Mix in a cold beer and
use batter immediately or refrigerate. Batter should be like pancake batter or
thinner depending on your preference.
Preparation of fish Marinate fish with a dry
rub of your choice then pat dry and coat in cornstarch before placing in
batter. Deep fry in hot oil until golden brown.
Sweet Chilli Scotch
Bonnet Sauce Mix a quarter cup of
sweet chili sauce with 1/4 of a scotch bonnet pepper minced. |
